Productive Approach
In Vineyard and Olive Grove
Our commitment and effort are to follow a sustainable and low-intervention farming approach that goes beyond the parameters of organic agriculture, for which we already have certification. We are reducing the use of sulfur and especially copper, replacing them with algae and mycorrhizae to stimulate the plants' self-defense, trying to anticipate problems as much as possible. We do not use herbicides and work the soil to control vegetation. We do not use insecticides except for pyrethrum for the mandatory fight against golden flavescence.
The grape harvest is done manually, ensuring special attention to each cluster. Currently, we do not irrigate, but we are considering it for emergency cases.
To counteract wildlife, we rely solely on deterrent methods and physical protection.
We would like to further reduce the overall number of interventions.
In the Winery
In the winery, fermentations are spontaneous to respect the characteristics of the vintage and the work done in the vineyard. In some cases, we use a pied de cuve, while in others, fermentation occurs en masse, without the addition of substances that alter the original characteristics. Sulfites are added at the bottling stage, remaining below 30 mg/liter for both whites and reds. We do not use filtration. This approach allows us to offer an authentic wine that reflects the purity and integrity of our territory.
